Passover Baked Stuffed Zucchini
Ingredients
- 2 x zucchini halved lengthwise
- 1 sm onion finely minced
- 4 Tbsp. tomato sauce
- 1/2 tsp minced parsley
- 1 x clove garlic minced
- 2 Tbsp. matzo meal
Directions
- 1) Scoop out pulp of zucchini halves. Heat pulp, onion, sauce and spices in a pan for 5 min. Add in matzo meal to mix and mix well. Restuff zucchini with mix. Place in a baking dish with a little water on bottom. Bake at 450F for 30 min till zucchini shells are soft.
