Passionfruit Curd
This is a butter cream curd with a passionfruit flavor. It goes with well with toasted brioche, may be served with fruit or as accompaniment for cakes. Ingredients
- 100g sugar
- 100g unsalted butter
- 3 eggs
- 50ml water
- 100ml passionfruit juice
Directions
- ---Prepare Ingredients---
- Beat eggs and strain into a bowl
- Add all sugar, butter, water, and passionfruit juice to bowl
- Cook all over a bain marie, stirring constantly
- Cook until the mixture coats the back of a spoon
- ---Cool Down---
- Strain through a fine strainer and cool down over ice
- ---Serve---
- The curd can be spread on toasted brioche or served with fresh fruit and is also served as accompaniment for cakes
