Ingredients

  • 2 x Rosemary and Onion Focaccias from Panera
  • 1 lb roasted turkey breast
  • 6 ounce dry cranberries
  • 4 slc sharp cheddar cheese - (1 ounce ea)
  • 1 sm red onion diced
  • 1/2 Tbsp. extra virgin olive oil
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Saute/fry the dry cranberries and red onion in extra virgin olive oil for two min. Add in salt and pepper to taste. Add in one Tbsp. of water to keep ingredients moist. Set cranberry compote aside.
  2. Slice the rosemary & onion focaccias in half, then slice horizontally to create the top and bottom sandwich portions. Cover the bottom half of the focaccia with cranberry compote and top with 4 ounces of roasted turkey breast and one slice of sharp cheddar cheese. Place top of focaccia over sandwich. Grill over medium-high heat on both sides.
  3. This recipe yields 4 sandwiches.
  4. Comments: Inspired by Italy, panini are sandwiches with fresh ingredients held between hearty bread slices which are pressed on a warm grill.
