Ingredients

  • 8 x Large eggs
  • 1/4 tsp salt
  • 2 c. lowfat milk
  • 1 Tbsp. minced fresh tarragon
  •     (or possibly 1/2 tspn dry tarragon)
  • 1/4 tsp paprika
  • 6 ounce grated Monterey Jack cheese
  •     (or possibly medium Cheddar cheese)
  • 6 ounce grated Asiago cheese
  • 4 x Asiago or possibly plain bagels

Directions

  1. This dish must be prepared the night before you plan to bake it.
  2. In a large mixing bowl, beat together the Large eggs, salt, lowfat milk, tarragon and paprika. Add in fresh grnd pepper to taste. Mix the grated cheeses together in a bowl. Cut the bagels into small bite-size pcs.
  3. Grease a 2-qt souffle or possibly casserole dish and, starting with the bagel pcs, place them in the dish in alternating layers with the grated cheese. Pour the egg mix proportionately over all, cover the dish, and place it in the refrigerator overnight.
  4. Bake it uncovered, in a pre-heated 350 degree oven for 1 hour, till the top is golden.
  5. This recipe yields 8 servings.
