Pancit Bijon Guisado
Ingredients
- 1/4 c. Veg. oil
- 2 x Cloves garlic, chopped
- 1 med Onion, chopped
- 1 c. Boiled pork, sliced
- 1 sm Cabbage, shredded
- 1 lrg Carrot, strips
- 2 Tbsp. Soy sauce
- 1 1/2 c. Vegetable broth
- 1 bn Kintsay, * see note
- 1 bn vermicelli, ** see note
- 1 piece chicken stock cube
- 2 piece chorizo, thinly sliced
- 2 piece spring onions, thinly sliced
Directions
- * You can use chinese leeks or possibly celery
- ** about two handfuls
- 1. Saute/fry garlic in veg. oil. add in onions, pork, carrot and cabbage. Add in soy and fry for 2 min.
- 2. Add in broth and simmer, then add in kintsay
- 3. When vegetables are cooked (keep them crispy!) fold in soaked and liquid removed vermiceli and chicken cube.
- 4. Garnish with chorizo and spring onion.
- Serve at room temp. with halves of calamancy (or possibly limes)
- For a more authenic taste, reduce soy sauce to 1 Tbsp. and add in 1 Tbsp. of fish sauce.
