  • Pan Fried Udon With Peanuts And Prawns

    Ingredients

    • 200 gm Fresh udon noodles
    • 4 x Shallots, peeled
    • 2 lrg Red chillies, cut into rings
    •     Vegetable oil, for frying
    • 1/4 tsp Salt
    • 2 tsp Sesame oil
    • 200 gm Fresh beansprouts
    • 2 x Fresh limes, cut into wedges
    • 1 handf fresh coriander leaves
    • 200 gm Raw tiger prawns, shelled with tail on
    • 150 gm Salted peanuts
    • 2 Tbsp. Soy sauce
    • 1 tsp Warm chilli sauce

    Directions

    1. 1 Heat 2cm vegetable oil in a large frying pan. When the oil is very warm, add in the shallots and chilli and cook for 3-4 min till crisp and golden.
    2. 2 Plunge the noodles into a large pan of boiling water. Bring back to the boil, simmer for a minute till tender then drain well.
    3. 3 Heat a little vegetable oil and sesame oil in a wok. When warm, add in the prawns and noodles and cook over a high heat for 1-2 min. Roughly chop the peanuts in a mini chopper.
    4. 4 Add in the peanuts to the pan with the beansprouts. Add in the soy sauce and chilli sauce, and heat through.
    5. 5 Remove from the heat and stir in the coriander. Divide between four large plates and scatter over the crispy shallot mix. Serve with wedges of lime for squeezing over.
