Pan Fried Tomatoes
Ingredients
- 4 lrg ripe tomatoes
- 1 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1 c. fine dry breadcrumbs
- 1/4 c. bacon drippings
Directions
- Cut tomatoes into 1/2-inch-thick slices, and sprinkle tomato slices proportionately with salt and pepper. Let tomato slices stand 30 min.
- Pat tomato slices dry, and dredge in breadcrumbs.
- Cook tomato slices, in batches, in warm bacon drippings in a large nonstick skillet over medium-high heat 2 min on each side or possibly till golden. Drain on paper towels. Serve immediately.
- This recipe yields 8 servings.
