Paleo Beef Broccoli Thai Style

I was looking for a good Thai recipe that was Paleo and came across a soup recipe that had some interesting ingredients. I made some changes and this is the result. The whole family loved it!!

If you are so inclined you can serve this over noodles,rice or sprouts.

Ingredients

  • • 2 tablespoons avocado coconut oil or fat of choice
  • • 1 white onion, chopped
  • • 4 tablespoons Thai green curry paste, adjust to taste
  • • 1-inch knob ginger, minced
  • • 2 garlic cloves, minced
  • • 1- 2 serrano pepper, minced
  • (use as much as you like 1=mild 2= spicy)
  • • 11/2 lbs Paper thin cut rib eye cut again into 2" pieces
  • (can be found in most Asian markets as shabu shabu beef)
  • • 5 tablespoons coconut aminos
  • • ½ teaspoon salt
  • • ½ teaspoon black pepper
  • • 2 cups beef bone broth or chicken stock
  • (PLEASE use high quality, slow cooked bone broth)
  • • 2 large stalks of broccoli, cut into florets
  • • 1 cup of FULL-FAT canned coconut milk
  • • Thai basil, garnish

Directions

  1. Add the oil and onion to a large saute pan or dutch oven and cook for 3-5 minutes, or until the onions begin to turn golden.
  2. Add the curry paste, ginger, garlic and serrano pepper and stir for a minute.
  3. Next, add the slices beef, coconut aminos, salt and pepper and cook until the beef is nearly brown.
  4. Add the broth, reduce the heat to low-medium. Cook for 20 minutes.
  5. Add the broccoli florets and coconut milk to the pot, cover and cook for another 10 minutes.
  6. Serve & garnish with basil.
