I was looking for a good Thai recipe that was Paleo and came across a soup recipe that had some interesting ingredients. I made some changes and this is the result. The whole family loved it!! If you are so inclined you can serve this over noodles, rice or sprouts.

    • • 1 white onion, chopped
    • • 4 tablespoons Thai green curry paste, adjust to taste
    • • 1-inch knob ginger, minced
    • • 2 garlic cloves, minced
    • • 1- 2 serrano pepper, minced
    • (use as much as you like 1=mild 2= spicy)
    • • 11/2 lbs Paper thin cut rib eye cut again into 2" pieces
    • (can be found in most Asian markets as shabu shabu beef)
    • • 5 tablespoons coconut aminos
    • • ½ teaspoon salt
    • • ½ teaspoon black pepper

    • (PLEASE use high quality, slow cooked bone broth)
    • • 2 large stalks of broccoli, cut into florets
    • • 1 cup of FULL-FAT canned coconut milk
