Palak means spinach and Paneer means cottage cheese in Hindi language. Both these items make a superb combination and not to forget that it is healthy. This simple recipe was taught to me by a friend when I was in UK. Enjoy!

    Ingredients

    • 2 bundles of spinach - boil & blend or 1 tin of spinach puree
    • 1 tomato - chopped or 1 tin of crushed tomatoes
    • 200g Paneer (found in Asian stores under frozen section)
    • 1 onion - chopped
    • 2 inch ginger - finely chopped
    • 1 tsp cumin seeds
    • 2 tsp chili powder
    • 2 tsp mango powder
    • 2 tsp garam masala
    • 1 tsp coriander powder
    • Salt to taste

    Directions

    1. Heat oil and fry the cumin seeds, onions and ginger until light golden.
    2. Then add the pureed spinach, chopped or crushed tomatoes. Stir for a minute then add all the spice powders and salt (adjust according to your own taste).
    3. Cook for sometime then add in the paneer (cottage cheese) and gently stir.
    4. Cover the pan for a few minutes to allow the paneer to cook.
    5. Once done, turn off stove and serve warm with chapatis.
