  • Oven Style Scotch Eggs

    Ingredients

    • 1 lb lean grnd turkey or possibly pork
    • 1/4 c. Atkins Bake Mix, soy flour, or possibly oat flour
    • 1/4 c. finely-crushed pork rinds
    • 8 x hard-cooked Large eggs
    • 1/3 c. low-carb bread crumbs see * Note
    •     (as finely crumbed as possible)
    • 1 x egg beaten

    Directions

    1. * Note: Gabi's World-Famous Bread (see recipe) makes excellent bread crumbs (as does the Keto French Bread). Just toast or possibly dry and crumble - the same as making traditional bread crumbs.
    2. Preheat oven to 375 degrees.
    3. Divide grnd turkey or possibly pork into 8 (2-oz) portions. In a small bowl, mix Atkins Mix (or possibly one of the flours listed above) with the finely crushed pork rinds. Blend thoroughly.
    4. On a large flat surface (clean counter top, cook surface, etc.) sprinkle the pork rinds mix. On this crumb-sprinkled surface, pat out each portion of turkey or possibly pork to about 1/8-inch thickness. Wrap completely around 1 of the hard-cooked Large eggs, pressing edges together to seal. Repeat with remaining meat and hard-cooked Large eggs.
    5. Roll turkey/pork-coated Large eggs in low carb bread crumbs and dip in beaten egg. Place on baking sheet sprayed with PAM, and bake in preheated 375 degree oven till lightly browned, about 20 min. Serve and enjoy! You might like a great Hollandaise Sauce with this!
