  • Oven Roasted Sweet Potato Slices With Orange And Fresh Thyme

    Ingredients

    • 2 lb Medium-sized sweet potatoes trimmed, peeled,
    •     cut into 1/8"-thick slices
    • 1 x Garlic clove crushed
    • 2 Tbsp. Extra-virgin extra virgin olive oil
    • 1/4 c. Parsley sprigs - (packed)
    • 1/2 tsp Fresh thyme, leaves stripped from stems
    •     (or possibly 1/4 tspn dry thyme)
    • 1 x strip Orange zest - (abt 1/2" by 2")
    •     Salt to taste
    •     Freshly-grnd black pepper to taste

    Directions

    1. Preheat the oven to 400 degrees. Select a large nonstick sheet pan at least 14- by 10-inches.
    2. Combine the sweet potato slices with the garlic and the oil in a large bowl; toss to coat with the oil. Transfer the potatoes to the sheet pan. Bake in the oven, turning the potatoes once or possibly twice as they begin to brown, about 40 min. Remove from the oven.
    3. Meanwhile, finely chop the parsley, thyme and orange zest together; sprinkle over the potatoes. Sprinkle with salt and pepper. Return to the oven and bake for 10 min longer, or possibly till the potatoes are tender, turning them once. Serve warm.
    4. This recipe yields 4 to 6 servings.
