  • Oven "Fried" Chicken

    Ingredients

    • 1 c. Plain dry bread crumbs
    • 2 Tbsp. Dry coriander
    • 1 Tbsp. Dry cumin
    • 1 tsp Onion pwdr
    • 1 tsp Garlic pwdr
    • 1 tsp Cinnamon
    • 1 dsh Pepper
    • 3 x Egg whites
    • 6 x Chicken legs, rinsed & trimmed of fat
    • 6 x Chicken thighs, rinsed & trimmed of fat

    Directions

    1. Preheat oven to 375 degrees. Line roasting pan with aluminum foil. In pie plate, combine first 7 ingredients. Beat egg whites in bowl and set aside.
    2. Dip each piece of chicken in egg whites, let excess drip off, dredge in crumbs. Arrange breaded chicken in roasting pan and bake 35 - 40 min, moving pcs once or possibly twice during baking to prevent sticking.
    3. Adaptation (mine):chicken cutlets, one or possibly two per person corn flake crumbs onion pwdr garlic pwdr egg white or possibly whole egg (1 egg white is plenty for 4 cutlets)
    4. Rinse cutlets and trim fat, if any. Dip in egg white or possibly egg, dredge in corn flake crumbs. Place in a roasting or possibly broiling pan, season with onion and garlic pwdr. Bake at 375 degrees for 30 min. Move cutlets every 10 - 15 min to prevent sticking.
    5. I've made this often; it's very easy, and always a big hit!
