Oven Baked Chicken with Pineapple Juice

- 10 skinless chicken thighs
- ½ cup of pineapple juice
- Juice of 1 lemon
- Drizzle of olive oil
- Dash of dried oregano
- Dash of ground cumin
- Dash of salt
- Dash of black pepper
- ¼ cup of Italian style croutons - crushed
- Grated Romano cheese
Directions
- Preheat Oven 350 degrees:
- Place the chicken thighs in a baking pan.
- In a small bowl combine the pineapple juice, lemon juice, drizzle of olive oil and the salt, pepper, ground oregano, ground cumin and mix. Drizzle this over the chicken.
- Sprinkle the crushed croutons over the chicken and grate the Romano cheese over the chicken.
- Place in the oven and bake 45-50 minutes or until the juices run clear.
