Outrigger's Islander Coffee Shop's Orange Bread

Ingredients

  • 4 1/2 c. Flour
  • 2 1/4 tsp Baking pwdr
  • 1/4 tsp Baking soda
  • 2 1/2 c. Sugar
  • 1 1/4 c. Vegetable oil
  • 1/2 Tbsp. Salt
  • 1/2 c. Orange zest
  • 1/4 c. Light corn syrup, Karo
  • 4 lrg Large eggs, beaten
  • 2 1/2 c. Water
  • 1 1/4 c. Evaporated lowfat milk
  • 1 1/2 Tbsp. Orange extract
  • 1/4 tsp Orange food coloring
  • 1/4 tsp Yellow food coloring

Directions

  1. Sift together flour, baking pwdr, baking soda, sugar and salt. In a separate bowl combine Large eggs, orange zest, vegetable oil, corn syrup, water, evaporated lowfat milk, orange extract and food colorings. Add in to dry mix, stirring only till moistened. Pour into 2 well greased loaf pans and bake at 350 degrees F for 50-60 min. NOTE The list of ingredients was given to me by the Islander Coffee Shop manager, Roy. He didn't have time to give me the method, sooo, I have developed the method using my Orange Muffins recipe, that uses basically the same ingredients. Test for doneness in the usual way.
