Outrageous Rhubarb Coffee Cake

This is delicious with fresh peaches chopped instead of rhubarb.

Ingredients

  • 1 cup milk or buttermilk
  • 1/2 cup melted butter
  • 1 egg
  • 1 tsp vanilla
  • 3 cups chopped rhubarb or peaches
  • 2 3/4 cups flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup brown sugar
  • 1/2 cup chopped nuts, optional
  • Topping:
  • 1/2 cup butter
  • 1/2 cup cream or milk
  • 1 cup sugar
  • 1 tsp vanilla

Directions

  1. Heat oven to 350 degrees.
  2. Grease a 9 x 13 inch baking pan
  3. Mix milk, melted butter, egg and vanilla
  4. Stir in the rhubarb or peaches
  5. In a separate bowl, mix flour, white sugar, baking soda and salt
  6. Stir the wet ingredients into the dry until just combined
  7. Spread batter into pan.
  8. Sprinkle brown sugar and chopped nuts on top
  9. Bake 45-55 minutes, until a toothpick inserted in center of cake comes out clean
  10. Meanwhile, stir and heat the topping ingredients in a small saucepan
  11. When the cake comes out of the oven, poke deep holes over the surface with the handle of a wooden spoon
  12. Drizzle the warm sauce over the cake holes
  13. Cool and serve.
