Otis Spunkmeyer's Banana Nut Muffins
Ingredients
- 1 c. mashed ripe bananas
- (abt 2 average size)
- 1 pkt banana cake mix
- 1 pkt instant banana pudding - (small)
- 4 x Large eggs
- 1/2 c. vegetable oil
- 3/4 tsp grnd cinnamon
- 1/2 c. water
- 1 tsp banana extract
- 1 c. finely-minced walnuts
Directions
- Preheat oven to 350 degrees. Blend all ingredients together till smooth, about 3 to 4 min.
- Fill baking c. 3/4 full and bake in a preheated oven about 20 min till done. Check for doneness with a toothpick inserted into top of muffin, if the toothpick comes out clean the muffin is done.
- Store muffins if there are any left in an airtight container.
- This recipe yields about 9 large muffins.
- Comments: These are really great. A super intense banana flavor. They also stay fresh for a couple of days when wrapped up in plastic. I would imagine this would make delightful banana nut bread !
