Ingredients
10 lbs orzo, cooked al dente
3 bags frozen peas
2 qts extra-virgin olive oil
3 lbs diced fresh onions
3 lbs parmesan cheese
2 lbs diced cooked bacon
4 cups 50/50 chicken broth
Directions
Note: Cook in batches.
Saute the orzo with the onions.
Add the broth and reduce by 1/2.
Add peas and bacon.
Heat through.
Pan up and garnish with parmesan cheese.
