Orzo with Bacon, Peas, and Parmesan

Ingredients

  • 10 lbs orzo, cooked al dente
  • 3 bags frozen peas
  • 2 qts extra-virgin olive oil
  • 3 lbs diced fresh onions
  • 3 lbs parmesan cheese
  • 2 lbs diced cooked bacon
  • 4 cups 50/50 chicken broth

Directions

  1. Note: Cook in batches.
  2. Saute the orzo with the onions.
  3. Add the broth and reduce by 1/2.
  4. Add peas and bacon.
  5. Heat through.
  6. Pan up and garnish with parmesan cheese.
