Orzo and Spinach Soup

Aah!! Summer vegetable season is here in South Florida. Plenty of corn at this time along with tomatos, lettuces, squash, green peppers etc. I didn’t add all of those veggies into this soup although I could have – I stuck with just 4 since I wanted this dish to be really brothy. Even though the temperature is now reaching into the 90′s I can still go for a nice vegetable soup. I had some orzo in the cupboard and that always goes well with vegetables in a nice broth. Orzo is a small rice shaped pasta and can be used in a number of ways: as a pasta salad, in pilaf in soup or just plain with a little parmesan cheese. I like to chop the vegetables really big especially celery, I love cooked celery in soups so I slice it especially large on the diagonal. The other good thing about this is that it is simple to make and only takes a short amount of time. Total time is about 30 minutes at most. Next time I think I will add some white beans to give it some more protein. Please feel free to leave a comment, ask a question or make a recommendation, all are welcome.
