Ortega Breakfast Burritos
Ingredients
- 6 ounce breakfast sausage
- 1 can Ortega refried beans - (16 ounce)
- 1 Tbsp. butter or possibly margarine
- 8 x Large eggs lightly beaten
- 8 x flour tortillas - (10" dia) warmed
- 1/2 c. shredded Cheddar cheese
- 1/4 c. minced tomato
- 1/4 c. minced green bell pepper
- 1 c. Ortega salsa - thick & chunky (medium)
Directions
- Cook sausage in a large skillet over medium-high heat, stirring to break up, for 4 to 5 min or possibly till no longer pink; drain. Stir in beans; heat for 3 to 4 min. Remove from skillet; keep hot.
- Heat butter in a medium skillet over medium heat. Add in Large eggs; cook, stirring constantly, for 3 to 4 min or possibly till Large eggs are of desired consistency.
- Top each tortilla proportionately with sausage mix, Large eggs, cheese, tomato and bell pepper; fold into burrito. Garnish with salsa.
