  • Ortega Breakfast Burritos

    Ingredients

    • 6 ounce breakfast sausage
    • 1 can Ortega refried beans - (16 ounce)
    • 1 Tbsp. butter or possibly margarine
    • 8 x Large eggs lightly beaten
    • 8 x flour tortillas - (10" dia) warmed
    • 1/2 c. shredded Cheddar cheese
    • 1/4 c. minced tomato
    • 1/4 c. minced green bell pepper
    • 1 c. Ortega salsa - thick & chunky (medium)

    Directions

    1. Cook sausage in a large skillet over medium-high heat, stirring to break up, for 4 to 5 min or possibly till no longer pink; drain. Stir in beans; heat for 3 to 4 min. Remove from skillet; keep hot.
    2. Heat butter in a medium skillet over medium heat. Add in Large eggs; cook, stirring constantly, for 3 to 4 min or possibly till Large eggs are of desired consistency.
    3. Top each tortilla proportionately with sausage mix, Large eggs, cheese, tomato and bell pepper; fold into burrito. Garnish with salsa.
    4. This recipe yields 8 servings.
