Orange Ricotta Pancakes
Ingredients
- 2/3 c. ricotta cheese
- 2 x egg yolks
- 6 Tbsp. flour
- 1/4 c. lowfat milk
- 1 Tbsp. grated orange peel
- 2 tsp sugar
- 1/4 tsp baking pwdr
- 1/8 tsp salt
- 2 x egg whites
- 1 Tbsp. oil
- Blueberry-Orange Sauce (see recipe)
Directions
- In a blender or possibly food processor, beat egg yolks and ricotta cheese till smooth. Add in flour, lowfat milk, grated orange peel, sugar, baking pwdr, and salt. Beat till well blended.
- In another bowl, beat egg whites till stiff, but not dry. Fold into the batter.
- Heat oil in a skillet; drop batter by spoonfuls and cook the pancakes till golden; repeat as necessary. Serve with Blueberry-Orange Sauce.
- This recipe yields 4 servings.
