  • Orange Cranberry Flax Muffins

    Ingredients

    • 1 c. cranberries coarsely minced
    • 2 Tbsp. sugar
    •     or possibly sugar Twin
    • 1/4 c. orange juice
    • 2 3/4 c. flour
    • 1/2 c. flaxseed granules
    •     or possibly grnd flax
    • 1/3 c. sugar
    • 2 tsp baking pwdr
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 tsp orange peel
    • 1 lrg egg
    •     or possibly 1/4 c. egg substitute
    • 1/4 c. fat free lowfat sour cream
    • 1 Tbsp. canola oil
    • 1 1/4 c. orange juice

    Directions

    1. Preheat oven to 375F.
    2. 1. Blend together cranberries, 2 Tbsp. sugar and 1/4 c. orange juice and set aside.
    3. 2. DRY - In a large bowl, mix together flour, flaxseed, sugar, baking pwdr, baking soda, salt and orange peel.
    4. 3. WET - In another bowl combine egg, lowfat sour cream, oil and 11/4 c. orange juice.
    5. 4. Pour liquid ingredients into dry ingredients. Stir till ingredients are moistened. Don't over mix. Mix in cranberry mix. Fill muffin c. 3/4 full. Bake for 30-35 min.
    6. YIELD: 12 muffins; 1 muffin = 212calories, 3g fat (13%), 18mg cholesterol
