Ingredients

  • 5-6 lbs. Pork Loin Roast
  • one teaspoon each: white pepper, garlic salt, onion powder
  • 1-1/4 cup vegetable stock (low sodium)
  • 1/4 cup Orange marmalade
  • 1 cup whole pitted cherries (can use dried cherries)
  • 2 tablespoons Honey

Directions

  1. Pre Heat Oven 375 F
  2. Mix seasonings in a small ramekin and sprinkle over the entire Pork Loin Roast, place into a baking/roasting pan, add veggie stock, cover with foil and bake 55 minutes
  3. In a small saucepan add orange marmalade, honey, cherries and cook on low heat 15 minutes
  4. Remove roast from oven and allow it to rest at least 10 minutes under the foil tent
  5. Cut into thick slices, add orange-cherry sauce
  6. Enjoy!
