one - bowl Chocolate cake

- cake
- butter for greasing and flour for dusting
- 1 3/4 cups flour
- 1 1/2cups brown sugar
- 3/4 cup oil
- 1/2 cup milk
- 2 large eggs
- 1/4 cup unsweetened cocoa powder
- 2 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
- 3/4 cup boiling water
- Choc icing
- 4 oz semisweet choc squares of 115 g chips
- 1/3 cup milk or cream
- 2 tbsp butter
- 1 1/4 cups icing sugar
- 1 tsp vanilla
Directions
- for the cake preheat oven to 350
- Butter a 10 inch bundt pan then lightly dust with flour knocking out excess
- In a large bowl combine 1 3/4 cups flour, sugar, oil, milk, eggs,cocoa,baking powder,soda, vanilla and salt. Beat the mixture with a wooden spoon or mixer. blend until smooth Add the boiling water and mix well. The batter will be runny
- Pour the batter into the pan. bake in the center of the oven until the top is dry and cake springs back. 30-40 minutes
- Let the cake cool in the pan for 10 min, then remove from the pan and cool completely on a wrack
- for the icing
- Heat choc milk and butter in a saucepan over low heat. Remove the saucepan from heat once melted and add icing sugar vanilla and whisk until smooth. Transfer the icing to a cup or pitcher.
