  • one - bowl Chocolate cake

    Ingredients

    • cake
    • butter for greasing and flour for dusting
    • 1 3/4 cups flour
    • 1 1/2cups brown sugar
    • 3/4 cup oil
    • 1/2 cup milk
    • 2 large eggs
    • 1/4 cup unsweetened cocoa powder
    • 2 tsp baking soda
    • 1 tsp vanilla extract
    • 1/2 tsp salt
    • 3/4 cup boiling water
    • Choc icing
    • 4 oz semisweet choc squares of 115 g chips
    • 1/3 cup milk or cream
    • 2 tbsp butter
    • 1 1/4 cups icing sugar
    • 1 tsp vanilla

    Directions

    1. for the cake preheat oven to 350
    2. Butter a 10 inch bundt pan then lightly dust with flour knocking out excess
    3. In a large bowl combine 1 3/4 cups flour, sugar, oil, milk, eggs,cocoa,baking powder,soda, vanilla and salt. Beat the mixture with a wooden spoon or mixer. blend until smooth Add the boiling water and mix well. The batter will be runny
    4. Pour the batter into the pan. bake in the center of the oven until the top is dry and cake springs back. 30-40 minutes
    5. Let the cake cool in the pan for 10 min, then remove from the pan and cool completely on a wrack
    6. for the icing
    7. Heat choc milk and butter in a saucepan over low heat. Remove the saucepan from heat once melted and add icing sugar vanilla and whisk until smooth. Transfer the icing to a cup or pitcher.
