Prep: 20 min Cook: 10 min Servings: 48by Salad Foodie406 recipes>Peanut butter cookie recipes abound, but none of them came close to rekindling memories of the favorite from my youth - until I came across this one in an Old Farmer's Almanac. The first batch I made convinced me the recipe was the one from my early baking years. Ah - answered prayers! Ingredients
- 1/2 cup butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, firmly packed
- 1/2 teaspoon vanilla extract
- 1 egg
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Directions
- Preheat oven to 350 degrees F.
- Combine butter, peanut butter, granulated and brown sugars, vanilla and egg, beating until light and fluffy. Stir together flour, baking soda, baking powder and salt in a small bowl; add to butter mixture, blending thoroughly.
- Shape into 1-inch balls and place about 2 inches apart on a baking sheet. Flatten slightly with fork tines in a crisscross fashion.
- Bake 9-11 minutes or until lightly browned.
- About 4 dozen cookies.
