    Old-Fashioned Peanut Butter Crisscross Cookies

    Peanut butter cookie recipes abound, but none of them came close to rekindling memories of the favorite from my youth - until I came across this one in an Old Farmer's Almanac. The first batch I made convinced me the recipe was the one from my early baking years. Ah - answered prayers!

    Ingredients

    • 1/2 cup butter, softened
    • 1/2 cup creamy peanut butter
    • 1/2 cup granulated sugar
    • 1/2 cup brown sugar, firmly packed
    • 1/2 teaspoon vanilla extract
    • 1 egg
    • 1 1/2 cups all purpose flour
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt

    Directions

    1. Preheat oven to 350 degrees F.
    2. Combine butter, peanut butter, granulated and brown sugars, vanilla and egg, beating until light and fluffy. Stir together flour, baking soda, baking powder and salt in a small bowl; add to butter mixture, blending thoroughly.
    3. Shape into 1-inch balls and place about 2 inches apart on a baking sheet. Flatten slightly with fork tines in a crisscross fashion.
    4. Bake 9-11 minutes or until lightly browned.
    5. About 4 dozen cookies.
