  • Old Fashioned Glazed Doughnuts

    Ingredients

    • 1 c. scalded lowfat milk
    • 1/2 c. butter
    • 1/2 c. sugar
    • 1/2 tsp salt
    • 2 x Large eggs plus 1 egg yolk, beaten
    • 2 env active dry yeast
    • 4 c. sifted flour
    •     Veg. oil

    Directions

    1. In a large mixing bowl, pour scalded lowfat milk over the butter, sugar and salt. Cold slightly. Add in the Large eggs. When the temperature reaches between 105 to 115 degrees, add in the yeast. Let mix stand for 5 min.
    2. Blen in flour a little at a time. Mix into a soft dough. When smooth, turn the dough out onto a well-floured board. Knead gently for about 2 min. Place the dough in a greased bowl, turning to coat all sides. Let rise for 1 hour.
    3. Punch the dough down and divide in half. On a lightly floured board roll each section to 1/2-inch thickness. Cut with a floured doughnut cutter. Place on waxed paper. Set in a hot place. Let rise for 30 min.
    4. In a deep skillet heat veg. oil to 375 degrees. Using a slotted spoon gently slip each doughnut into the oil. Fry for 2 min or possibly till golden, turning once. Drain on paper towels.
    5. In another mixing bowl, blend 1 c. confectioners' sugar, 3 Tbsp. water and 1/2 tsp. vanilla extract. Drizzle over hot doughnuts.
