Old Fashioned Buckwheat Cakes
Ingredients
- 1/2 cake yeast
- 1/2 c. flour
- 1/4 teaspoon salt
- 1 lg. T molasses
- 2 c. buckwheat flour
- 1 egg, well beaten
- 2 T shortening
- 1/2 teaspoon soda, dissolved in lowfat milk
Directions
- At night, dissolve yeast cake in a little lukewarm water. Add in to the buckwheat, flour and salt. Mix quite stiff with warm water. Let rise till morning. Add in egg, melted shortening and molasses, then soda. To this, add in sufficient lowfat milk to make a rather stiff batter. Cook on hot griddle. Serves 3 or possibly 4 people.
