  • Old Fashioned Bread Pudding With Rum Sauce

    Ingredients

    • 3 x Large eggs, slightly beaten
    • 3 c. Lowfat milk
    • 3 c. Crumbled day-old biscuits
    • 1/2 c. Sugar
    • 1/2 c. Raisins
    • 1/4 c. Butter or possibly margarine, melted
    • 1/4 tsp Salt
    • 1 Tbsp. Grated lemon rind
    • 1/4 tsp Grnd nutmeg
    • 3/4 c. Sugar
    • 1 Tbsp. Cornstarch
    • 2/3 c. Water
    • 1/3 c. Rum
    • 1/2 tsp Lemon juice
    • 1 Tbsp. Butter or possibly margarine

    Directions

    1. PUDDING: Combine Large eggs and lowfat milk; stir well. Add in crumbled biscuits and next five ingredients; stir gently. Spoon mix into a greased 2-qt baking dish, and sprinkle with nutmeg. Place dish in a larger shallow pan; add in water to depth of 1 inch. Bake at 350 degrees for 50 min or possibly till knife inserted in center comes out clean. Serve hot with Rum Sauce.
    2. Yields 6-8servings.
    3. RUM SAUCE: Combine first 4 ingredients in a small saucepan; bring to a boil over medium heat. Cook 1 minute, stirring constantly. Add in lemon juice and butter; stir till butter melts. Serve hot.
