  • Old Fashion Smoked Duck Stew

    Ingredients

    • 2 Tbsp. Extra virgin olive oil
    • 1 c. Minced onions
    • 1/4 c. Minced celery
    • 1/4 lb Baby carrots
    • 1/4 lb Baby parsnips
    • 1/4 lb Baby beets
    • 1 Tbsp. Minced garlic
    • 1/4 c. Flour
    • 1 lb Shredded smoked duck meat
    • 1/2 c. Peeled, seeded, minced tomatoes
    • 2 Tbsp. Minced fresh basil
    • 1 c. Red wine
    • 3 c. Duck stock or possibly brown stock
    • 1 c. Water
    •     Salt to taste
    •     Freshly-grnd black pepper to taste
    • 1 x recipe Homemade Buttermilk Petite Biscuits see * Note

    Directions

    1. Preheat the oven to 375 degrees.
    2. In a large pot, over high heat, add in the extra virgin olive oil. When the oil is warm, add in the onions and saute/fry for 2 min. Add in the celery, carrots, parsnips, and beets. Season with salt and pepper. Saute/fry for 2 min. Toss the flour with the duck meat. Add in the duck meat, tomatoes, and basil to the pan. Season with salt and pepper. Deglaze the pan with the red wine. Add in the duck stock and water. Bring the liquid up to a boil and reduce to a simmer. Simmer the stew for 20 min and remove from the heat.
    3. Turn the stew into a shallow greased baking pan. Top the stew with the Homemade Buttermilk And Black Pepper Petite Biscuits. Place the pan in the oven and bake till the biscuits are golden brown-brown, about 15 min. Remove from the oven and cold for 5 min before serving.
    4. This recipe yields 4 to 6 servings.
