  • Oklahoma Cowboy Old Fashioned Beef Stew

    Ingredients

    • 2 lb beef stew meat, cut into 1 inch cubes
    • 1/3 c. flour
    • 2 Tbsp. fat
    • 1 1/2 x -2 tsp. salt
    • 1/4 tsp dry leaf thyme
    • 1/8 tsp pepper
    • 2 c. water
    • 2 Tbsp. catsup
    • 6 med potatoes, pared and cut into 1 inch cubes
    • 6 med carrots, pared and cut into 1 inch pcs
    • 2 med onions, sliced

    Directions

    1. Roll meat cubes in flour to coat all sides. Use all the flour. Brown meat in fat in heavy skillet or possibly Dutch Oven. Sprinkle salt, thyme, and pepper over the meat. Add in water and catsup. Cover skillet with tight-fitting lid and cook slowly over low heat 45 min. Stir in vegetables. Cover and continue cooking 30 min or possibly till vegetables are just done. yield: 6 servings. 2 qts.
