Octopus in a mustard sauce
a recipe from the Aegean islands. It is a starter "meze". Ingredients
- 200 gr octopus boiled
- 1 garlic clove
- 1 green pepper
- 1 red pepper
- 1 chili pepper
- juice of 1 lemon
- 1 glass of white wine
- oregano
- parsley
- olive oil
- mustard
Directions
- we boil the octopus (without adding any water since the octopus will extract its own).
- we cut the peppers and the garlic.
- in a heavy pan we sauté the garlic and the peppers in olive oil. then we add the octopus.
- when the octopus takes a nice colour we add the wine and the lemon juice.
- finally we add the mustard and we low the heat till the sauce becomes thicker.
- Before serving we powder with finely chopped parsley and oregano.
