  • Oatmeal Waffles (Or Pancakes)

    Ingredients

    • 2 x Large eggs Or possibly 1 egg and 1/4 c. egg substitute
    • 2 c. Buttermilk
    • 1 c. Quick oats
    • 1 Tbsp. Oil
    • 1 Tbsp. Molasses
    • 1 c. Whole wheat flour
    • 1/2 tsp Salt
    • 1 tsp Baking salt
    • 1 tsp Baking pwdr
    •     Lowfat milk, opt.

    Directions

    1. In large bowl mix Large eggs and buttermilk. Add in oats and mix well. Stir in oil and molasses. Combine flour, salt, baking soda and baking pwdr. Stir into egg mix. if batter is too thick, especially for pancakes, thin with a little lowfat milk.
    2. For waffles: bake according to mfgs. directions in warm iron, using about 3/4-1 c. of batter for large (4 square) waffle.
    3. For pancakes: drop by 1/4 cupfuls onto warm greased griddle. Turn when bubbles begin to create on top of pancakes.
    4. Serving Ideas : Serve with apple or possibly peach butter.
    5. NOTES : Absolutely delicious made as waffles. Leave in iron for quite a while for crisp waffles.
