  • Oatmeal waffles

    These tender, flavorful waffles are our favorite.

    Ingredients

    • 2 eggs, beaten
    • 2 cups buttermilk
    • 1 cup quick-cooking oats
    • 1 Tbsp. molasses
    • 1 Tbsp. canola oil
    • 1 cup whole wheat flour
    • 1/2 tsp. salt
    • 1 tsp. baking soda
    • 1 tsp. baking powder
    • milk, optional

    Directions

    1. In a large bowl, mix eggs and buttermilk.
    2. Add oats and mix well.
    3. Stir in molasses and oil.
    4. Combine flour, baking soda, baking powder, and salt; stir into egg mixture.
    5. If batter becomes too thick, thin with a little milk.
    6. Pour about 3/4 cup batter onto a greased preheated waffle maker.
    7. Bake according to manufacturer's directions.
    8. To make pancakes: Drop batter by 1/4 cupfulls onto a hot greased griddle.
    9. Turn when bubbles begin to form on top of pancake.
