    Bump up breakfast nutrition with multi-grain hotcakes! Add fresh fruit, and breakfast goes from "ho-hum" to "oh, yum!"

    Ingredients

    • 3/4 cup quick-cooking oats*
    • 1/2 cup whole wheat flour (white whole wheat or or all-purpose flour also OK)
    • 1 tablespoon brown sugar
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon cinnamon
    • 1/8 teaspoon salt
    • 1 large egg
    • 1 cup buttermilk
    • 2 tablespoons butter, melted
    • NOTE: Quick cooking oats are best, but If regular rolled oats are substituted, place oats in a small food processor or blender and pulse briefly to reduce to small flake size.

    Directions

    1. Heat non-stick griddle over medium heat.
    2. In medium bowl mix together oats, whole wheat flour, brown sugar, baking powder, baking soda, salt and cinnamon.
    3. In small bowl beat egg; add buttermilk and butter. Add to flour mixture stirring just until dry ingredients are incorporated (don't overmix.)
    4. Coat heated griddle with cooking spray. Spoon about 2 to 3 tablespoons batter per pancake onto griddle.
    5. Turn pancakes over when tops are covered with bubbles; cook until bottoms are lightly browned.
    6. Optional: Serve with choice of fresh fruit, butter and syrup.
    7. Yield: 12 pancakes, or 3-4 servings.
