Oatmeal Pancakes

- 3/4 cup quick-cooking oats*
- 1/2 cup whole wheat flour (white whole wheat or or all-purpose flour also OK)
- 1 tablespoon brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
- 1 large egg
- 1 cup buttermilk
- 2 tablespoons butter, melted
- NOTE: Quick cooking oats are best, but If regular rolled oats are substituted, place oats in a small food processor or blender and pulse briefly to reduce to small flake size.
Directions
- Heat non-stick griddle over medium heat.
- In medium bowl mix together oats, whole wheat flour, brown sugar, baking powder, baking soda, salt and cinnamon.
- In small bowl beat egg; add buttermilk and butter. Add to flour mixture stirring just until dry ingredients are incorporated (don't overmix.)
- Coat heated griddle with cooking spray. Spoon about 2 to 3 tablespoons batter per pancake onto griddle.
- Turn pancakes over when tops are covered with bubbles; cook until bottoms are lightly browned.
- Optional: Serve with choice of fresh fruit, butter and syrup.
- Yield: 12 pancakes, or 3-4 servings.
