Nuwave Oven Frozen Cod, Fresh Asparagus, and Stuffed Mushrooms
I have just invested in a Nuwave Oven and couldn't be happier with it. This was my fist attempt at a dinner meal for myself. The convenience of cooking from frozen and staging my food was awesome. I am already eating healthier.Most of my recipes will be single servings as i am on a weight loss regimen. Any leftover veggies can be frozen for future use. Ingredients
- 4 ounce cod (Frozen)
- 6-8 stalks of asparagus (Fresh)
- 2 large size mushrooms for stuffing (Fresh)
- 1 tbsp Panko bread crumbs
- Small amount imitation crab meat (Real if your wealthy :) )
- 1/2 tbsp parmesan cheese
- 1 tbsp reduced fat margarine (less or more to your liking)
- light olive oil
- salt & pepper for seasoning
- Italian seasoning
Directions
- Lightly baste frozen cod with light olive oil
- Season with salt, pepper, & Italian seasoning
- Place cod on the nuwave grill (4 inch level)
- Replace lid, press cooking time, press 7 minutes, and press start
- While cod is cooking:
- Season asparagus with salt & pepper
- Melt margarine and add Panko bread crumbs, & imitation crab meat
- Lightly rub mushrooms with light olive oil
- Stuff mushrooms with bread crumb mix and sprinkle with parmesan
- After first 7 minutes are up remove Nuwave lid, turn fish over,
- Add asparagus & stuffed mushrooms to grill next to cod
- Replace lid, press cooking time, press 7 minutes, and press start.
- After second 7 minutes are up remove your food and enjoy.
