  • Nuwave Garlic Chicken Parmigiana

    This is a recipe I made up one night - I was in a hurry and hungry. My friends raved about it! They keep asking me to make it every time they come over. Add your own spices to make it up your way, either way this is a knock out dish most everyone will love. Please note : I made this on the lighter side. So, add more cheese (just know more calories come with most cheese). Since there is a lot of salt in most of the cheese extra, I did not add any extra to the sauce. You can cook this in advance and just warm it up on the day of your dinner (I have cooked this the night before and served the next day. If you cook them back to back (once cooked I cover in tin foil and put in a 250 degree oven to keep hot until the other pan is done).

    Ingredients

    • 24 ounces marinara sauce
    • 24 ounces crushed tomatoes
    • 1 tablespoon granulated garlic
    • 1 tablespoon pepper
    • 1 tablespoon basil
    • 4 garlic cloves
    • 1/2 cup onion
    • 1/2 cup chopped mixed mushrooms
    • 1/2 Italian seasoned breadcrumbs
    • 1/4 cup mozzarella cheese
    • 1/4 cup parmigiano-reggiano cheese
    • 12 chicken tenders

    Directions

    1. Open the jar of marinara sauce, add crushed tomatoes, granulated garlic, pepper, basil. Mix together until well mixed - set aside. Chop onions, mushrooms, garlic. Once chopped add to the sauce and combine.
    2. In 2 9 x9 metal pans add about 1/2 - 1 cup marinara sauce add the 6 frozen chicken tenders cover with sauce , 1/2 the cheese (shredded) parmigiano-reggiano and mozzaella then divide between the two pans. top with 1/2 the bread crumbs on each pan try to cover evenly. (repeat for other pan).
    3. In your new wave cook on hi 20 minutes or until you feel it is done. (I bake one at a time). If you like it a bit brown (baked cheese) bake for an additional 5 minutes on high.
