Nut And Pumpkin Pound Cake
Ingredients
- 1 3/4 c. Unbleached flour
- 3/4 c. Granulated sugar
- 1/2 c. Brown sugar, packed
- 1/2 c. Walnuts, minced
- 2 tsp Cinnamon
- 1 tsp Baking soda
- 1 tsp Nutmeg
- 1/4 tsp Salt
- 1 c. Fat-free lowfat sour cream
- 1 c. Pumpkin, canned
- 3 x Large eggs
Directions
- Preheat oven to 325. Prepare a 9 x 5" pan with cooking spray; set aside.In a mixing bowl, combine flour, sugars, walnuts, cinnamon, baking soda, nutmeg, and salt. In another mixing bowl, combine lowfat sour cream, pumpkin, and Large eggs. Mix dry ingredients with wet ingredients just till moistened. Spread into prepared pan. Bake for 1 hour and 15 min.
