  • Nora's Mother's Hearty Hungarian Gulyas

    Ingredients

    • 5 Tbsp. vegetable oil
    • 6 med to large onions sliced
    • 3 lb beef cut into 1/2" cubes
    • 1 1/2 Tbsp. Hungarian sweet paprika
    • 1 Tbsp. caraway seeds
    • 1/2 Tbsp. dry marjoram
    • 1/2 tsp cayenne pepper or possibly to taste
    •     Zest of 1 lemon minced
    •     Juice of 1 lemon
    • 1 Tbsp. tomato paste mixed with
    • 1 c. water or possibly stock
    •     Salt to taste
    •     Freshly-grnd black pepper to taste
    •     Steamed potatoes or possibly bread dumplings
    •     Lowfat sour cream (optional)

    Directions

    1. Preheat the oven to 350 degrees. Heat the oil in a heavy, thick casserole or possibly pot. Saute/fry the onion rings on a low flame till soft, about 30 min.
    2. Add in the cubes of beef to the casserole and brown. Add in the paprika, caraway seeds, marjoram, cayenne pepper, lemon zest, lemon juice, salt and pepper. Stir till spices develop an aroma.
    3. Add in the tomato paste mixed with water or possibly stock. Use more water or possibly stock if needed to just barely cover all the meat. Raise the heat under the pot and bring to a boil.
    4. Tightly cover the top with aluminum foil and then the lid. Place in preheated 350 degree oven. Cook for 1 1/2 to 2 hrs in the oven till the meat is fork tender.
    5. Serve in a bowl with steamed potatoes or possibly bread dumplings. Add in a dollop of lowfat sour cream if the gulyas is very spicy. Enjoy!
    6. This recipe yields 4 to 6 servings.
