No Flour, No Sugar Blueberry Muffins
You can add or use a combination of carrots bananas or apples and add nuts if you like. Ingredients
- 1 C Milk (1%)
- 2 C Quick Oats (Grind 1/2 of them to flour consistency)
- 1 Egg
- 4 Tbls unsweet Applesauce
- 4 Tbls Splenda
- 2 tsp. baking powder
- 1/2 tsp cinnamon
- Couple dashes salt
- 1/2 tsp Vanilla
- 1/2 C Blueberries
Directions
- Heat oven to 425
- Grease pan
- Combine milk and 1/2 oats that you not grind and soak for 15 min.
- In seperate bowl beat egg and applesauce, stir in oatmeal, add remaining ingredients and mix.
- Bake 15-17 minutes.
