  • No Bake Pineapple Cream Cake

    Ingredients

    • 4 c. vanilla wafer cookie crumbs
    • 2 x 8-ounce. cans crushed pineapple, liquid removed
    • 3 Tbsp. butter, melted
    • 1/3 c. walnuts, minced
    • 1/3 c. sugar
    • 3 ounce cream cheese, softened
    • 1 tsp vanilla
    •     Whipped cream

    Directions

    1. Sprinkle 1/3 of the cookie crumbs on the bottom of a 1-qt dish. Combine pineapple, butter, walnuts, sugar, cream cheese and vanilla and mix well. Place 1/2 of this mix over cookie crumbs followed by 1/3 crumb mix then the other 1/2 of pineapple mix and top with remaining crumbs. Place in the refrigerator for several hrs before serving. Top with whipped cream when serving.
    2. Chefs Notes: Use light cream cheese and low fat whipped topping in place of the whipped cream.
