  • No Bake Peanut Butter Chocolate Bars

    Ingredients

    • 20 x Chocolate wafer cookies
    • 1/2 c. Peanuts, salted
    • 4 Tbsp. Margarine, softened
    • 1 1/4 c. Graham cracker crumbs, 11 whole crackers
    • 1 c. Powdered sugar
    • 3/4 c. Peanut butter, creamy
    • 1 tsp Vanilla extract
    • 4 Tbsp. Margarine, softened
    • 1/2 c. Chocolate chips
    • 1/4 c. Peanuts, minced

    Directions

    1. ABOUT 4 Hrs BEFORE Or possibly EARLY IN THE DAY:
    2. BOTTOM LAYER: In a blender at medium speed or possibly in a food processor with knife blade attached, blend chocolate wafers and 1/2 c. peanuts to fine crumbs.
    3. In 11 x 7-inch metal baking pan, with hands, mix chocolate- crumb mix with margarine til well blended; firmly press mix onto bottom of pan.
    4. Chill to set crust.
    5. MIDDLE LAYER: In large bowl, with hands, mix graham cracker crumbs, powdered sugar, peanut butter, vanilla, and 4 tbsp margarine til blended.
    6. With hands, knead mix til smooth. Pat peanut butter mix proportionately over chilled crust.
    7. TOP LAYER: Sprinkle chocolate chips and minced peanuts over peanut butter mix. Cover with plastic wrap. With hands, firmly press down chocolate chips and minced peanuts. Chill, covered, for at least 3 hrs.
    8. When cool, cut lengthwise into 4 strips, then cut each strip crosswise into 6 pcs. Store refrigerated in tightly covered container. Also freezes well.
