  • No-Bake Lemon Cheesecake

    This is a lovely cheesecake that I found via www.nibbledish.com by Joannajane. It is really easy to make and truly delicious. I modified just a little by adding some lemon zest and some of its fruity bits into and on the cake.

    Ingredients

    • 200g digestive biscuits - bashed into crumbs
    • 100g butter - melted
    • 200g cream cheese
    • 150ml double cream
    • 75g icing sugar
    • 1 lemon - juice (may use 2 lemons if like it to be more lemony)

    Directions

    1. Mix the biscuits crumbs with the melted butter and and put in on a greased tin as a base. Press till even and keep in the fridge to set for about 1 hour.
    2. Whisk the cream cheese and double cream till thick and creamy.
    3. Add the icing sugar and lemon juice and mix till smooth and thick.
    4. At this stage add in some of the zest and fruity bits (optional).
    5. Add the mixture on the biscuit base and spread evenly. Top with a little more of zest and fruity bits if desired.
    6. Leave to set in the fridge for several hours till the topping has set.
    7. (Note: the cake cuts and tastes better the next day as it has had enough time to set).
