Native Pancit Canton with Prawns

One of the many variants of 'Pancit' is Canton. I used egg noodles for this recipe.

Ingredients

  • 500g Egg noodles
  • 2 tbsp Canola Oil
  • 2 tsp Minced garlic
  • 1/4 cup Sliced onions
  • 1/4 cup Peeled prawns
  • 1/4 cup Sliced pork
  • 1/4 cup Sliced chicken gizzard
  • 1/4 cup Slice chicken liver
  • 1/4 cup Sliced shitake mushrooms
  • 1 pc Chinese chorizo, sliced (opitional)
  • 2 tbsp Soy sauce
  • 1/2-1 tsp Chicken powder
  • 1/4 tsp Pepper
  • 2 1/2 cups Water (or as needed)
  • 1/2 cup Sliced carrots
  • 1/2 cup julienned green beans
  • 1 cup Shredded cabbage
  • 5 pcs calamansi

Directions

  1. Heat oil in a wok.
  2. Sauté onion, garlic chicken liver and gizzard
  3. Add pork and cook for 2-3 minutes.
  4. Add mushrooms, prawns,and chorizo.
  5. Season with soy sauce.
  6. Add water and boil on high heat.
  7. Mix in carrots and cabbage, cover with a lid and turn fire to low so that the vegetables are cooked by the steam.
  8. Season with chicken powder and pepper.
  9. Turn off heat and take off the veggie mix and place on service platter, set aside.
  10. Turn on heat and add in noodles in the hot veggie juice and cook until noodles are done to al dente.
  11. Pour in the cooked noodles back in the pan and mix thoroughly for noodles to incorporate.
  12. Tturn off fire and serve on a platter with slices of calamansi.
