My Favorite Asian Slaw

Ingredients

  • 6 tablespoons rice wine vinegar
  • 4 tablespoons vegetable oil
  • 2 tablespoons sesame oil
  • 5 tablespoons creamy peanut butter
  • 3 tablespoons soy sauce
  • 3 tablespoons honey
  • 6 green onions, chopped
  • 1/4 cup cashews, chopped
  • 8 raw carrots, peeled and shredded
  • 3 raw beets, peeled and shredded
  • jalapeno pepper, seeded and diced to taste

Directions

  1. Combine first 6 ingredients in bowl and whisk until combined.
  2. Add remaining ingredients and mix well.
  3. Chill in refrigerator for 2 hours and serve.
  4. Enjoy!
