Mushroom, Lemon Orzo
So delicious and easy! Always a crowd pleaser! Oh, and the recipe makes a ton! Ingredients
- 1 lb orzo
- 3/4 c pine nuts
- 3/4 c parsley, chopped
- Juice of 2 lemons + peel of 1 lemon
- 2 Tbsp EVOO + 1/4 c for cooking mushrooms
- 12 oz. mushrooms
Directions
- Boil orzo until al dente.
- Drain pasta and return to pot.
- Stir in pine nuts, parsley, lemon juice, lemon peel, and 2 Tbsp. EVOO.
- Season with salt and pepper as needed.
- Heat 1/4 c olive oil in skillet; add mushrooms and cook until brown.
- Add cooked mushrooms to orzo.
- Serve.
