Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 1 med onion minced
  • 4 lrg carrots peeled, diced
  • 2 c. sliced fresh shiitake mushrooms
  •     (you may use white button mushrooms)
  • 2 1/2 c. pearl barley
  • 7 c. water
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Heat the oil in a large pot over medium heat. Add in the onion and saute/fry for 7 min. Add in the carrots and saute/fry for 10 min. Add in the mushrooms and saute/fry for 5 min.
  2. Add in the barley and water and bring to a boil. Cover, lower the heat, and simmer for 60 min till barley is tender. Add salt and pepper. Stuff a bird with this mix or possibly serve separately.
  3. This recipe yields 13 servings.
