    This is a quick meal and yet complete in itself. Enjoyable and delicious. My family totally loves them, and since we didnt have a name for it, they called it Mummy's potatoes, then later evolved to Maggie's Potatoes. I first had this meal at a friend's place. I developed my own recipe from that

    Ingredients

    • 1 Kg of Potatoes
    • 6 eggs
    • 1 head of broccoli
    • 3 large onions - sliced
    • 2 cloves of Garlic - chopped
    • a small piece of ginger - I prefer the tuber by you can substitute with the powder - to your taste
    • 2 cups of cream
    • 2 table spoons of sunflower oil
    • 1 big roll of salamis
    • 2 teaspoonful of curry powder
    • 1 tsp of black pepper

    Directions

    1. Peel the potatoes and slice them like you would for potato crisps
    2. slice the salamis as the potatoes
    3. Get the broccoli florets
    4. in a large not so deep pan, but wide in surface area, simmer the onions in the oil without allowing them to brown
    5. add the garlic and the chopped ginger to cook until you can enjoy the fragrance of garlic cooking
    6. add the salami and saute for about two minutes
    7. add the potatoes and similarly saute them for four minutes to avoid overcooking
    8. cover to simmer for three minutes
    9. add the cream and stir to mix well
    10. Add the broccoli
    11. break the eggs on top of the potatoes allowing the sunny side up
    12. DO NOT stir, cover the potatoes and let them cook slowly with very low fire. this should take about twenty minutes.
    13. You can have the eggs well done or to your liking.
    14. Optional (you can sprinkle cheese as you serve)
