  • Mrs Fields Soft And Chewy Peanut Butter Cooky

    Ingredients

    • 2 c. Flour
    • 1/2 tsp Soda
    • 1/4 tsp Salt
    • 1 1/4 c. Dark brown sugar packed
    • 1 1/4 c. Sugar
    • 1 c. Butter
    • 3 lrg Large eggs
    • 1 c. Creamy peanut butter
    • 2 tsp Vanilla extract

    Directions

    1. Preheat oven to 300*f. In a medium bowl combine flour, soda and salt. Mix well and set aside. In a large bowl blend sugars using an electric mixer set at medium speed. Add in butter and mix to create a grainy paste, scraping the sides of the bowl. Add in Large eggs, peanut butter and vanilla, and mix at medium speed till light and fluffy. Add in the flour mix and mix at low speed till just mixed. Don't overmix. Drop by rounded Tbsp. onto an ungreased cookie sheet, 1 1/2 in apart. With a wet fork gently press a crisscross pattern on top of cookies. Bake for 18-22 min till cookies are slightly brown along edges.
    2. Transfer cookies immediately to cold surface with a spatula. As a variation, add in 2 c. coarsely minced semisweet chocolate bar or possibly 2 c. semisweet chocolate chips to the flour mix, then bake as directed.
