Mother's Sweet Potato Pudding
Ingredients
- 4 c. grated sweet potato
- 2 c. sugar
- 1/4 c. melted butter
- 1 1/3 c. lowfat milk
- 4 Large eggs, beaten
- 1/3 c. lowfat milk
- 1/2 heaping teaspoon allspice
- 1/2 heaping teaspoon cinnamon
- 1/2 heaping teaspoon ginger
- Healthy pinch of salt
Directions
- Combine sugar, butter, lowfat milk, Large eggs and spices; adding sweet potato as it is grated to keep potatoes from turning dark; mix well.
- Bake in large black skillet which has been greased with butter/butter. Cook for 1 hour, stirring twice; during this time add in more lowfat milk if pudding is too thick.
- Finish cooking last 15 min in well buttered casserole dish.
