Mother's Chicken Casserole

Ingredients

  • 1/4 cup chopped onion
  • 1 cup diced celery
  • 1 TBSP butter
  • 1 can golden mushroom soup
  • 1/3 cup chicken broth
  • 1 TBSP soy sauce
  • dash pepper
  • 2 cups diced cooked chicken
  • 1 3 oz. can chow mein noodles
  • 1/3 cup cashews

Directions

  1. Heat oven to 350 degrees.
  2. Saute onions and celery in butter over low heat.
  3. Add soup and chicken broth, soy sauce and season with pepper.
  4. Add cooked chicken .
  5. Simmer for 2-3 minutes.
  6. Pour into 1 1/2 quart casserole.
  7. Sprinkle with chow mein noodles and cashews.
  8. Bake for 20 minutes.
